The Mondays: March 12, 2025

Mar 12, 2025

I know it’s Wednesday. After a month-long parade of illnesses and the missed work that comes with that, I’ve hit a wall, but unlike those Looney Tunes characters of my youth, I did not go through it. So I am recovering, and thought I would start getting back on track with a bit of blogging. Let’s dive in.

Rag & Bone’s Miramar line uses a printing technique that makes any material look like denim. Thus, they’re jeans that feel like sweatpants. Emily Amick was the first person to try to sell me on these jeans, but it took approximately 1,376 more mentions in podcasts, ads, social posts, and newsletters to get me there.

What can I say? I’m stubborn when someone asks me to spend $200+ on sweatpants. But I can confidently say they were worth it.

I bought the Sofie jean in the terry fabric. These look the most like the denim styles I often wear working from home — ankle length, wide leg, medium wash — so they fell into my wardrobe seamlessly. I wore them so much last week, I’m considering a second pair. There are 30 Miramar styles to choose from, including jackets and shorts.

We eat a lot of rotisserie chicken in this house. It’s one of the few items that everyone from the toddler to the picky husband will eat. Plus, it’s an easy thing to buy and pair with the crisper drawer orphans and freezer leftovers that need to be used up.

This elevated salad with greens and herbs really made that boring grocery store chicken feel special. I’m also going to check out this Korean BBQ recipe using leftover chicken, and I saved this Avocado Mojo Bowl recipe ages ago and forgot about it. If you have a favorite way to use rotisserie chicken, put it in the comments below.

I’ve said it before, and I will say it again, these Topicals brightening eye gels are the only ones that work. I put them on when I feel beleaguered, stressed, exhausted, or overwrought and they make me look like I don’t survive on minimal sleep, too much caffeine, and Alprazolam.

They’re so good that I have them on Subscribe & Save. It’s literally these eye gels, furnace filters, Avery’s dental dog treats, and Sloane’s shelf stable yogurt pouches. You know, the important things in life.

I’ve been listening to the podcast Everything is Fine for a couple of years, so I was shocked to discover that I have never recommended it. The EiF is billed as a podcast for women over 40, and it delivers for those of us who would rather listen to smart women with good recommendations talk about perimenopause, neck cream and personal style than listening to a 24-year-old discuss they’re entrepreneurial journey to becoming a TikTok influencer. It’s really worth your time. I recommend starting with their recent episode with Samantha Irby as an entry point.

What did you love this week? Drop the recipes, shows, and shopping finds in the comments.

My favorite use for leftover rotisserie chicken, aside from eating it straight up out of the plastic grocery store container, is to make this chicken pot pie: https://cupofjo.com/2022/11/02/weeknight-dinner-party/.

We make bone broth from the vegetable scraps from the week and the rotisserie chicken bones and scraps, just throw in the crock pot overnight and in the morning, we have the base for soups, orzo and rice for the week.

I’ve been obsessed with this salad recipe over the past 2 months – sans Parmesan, but the dressing is awesome.

Love EIF podcast. Wish the Rag and Bone jeans came in larger sizes…I hoped the XL would work but then looked at size chart and NO WAY.

I love to add rotisserie chicken to this Mexican Street Corn Soup recipe: https://thestayathomechef.com/mexican-street-corn-soup/

I like to peel off all the rotisserie skin and chuck it in the (basket-style) air fryer for a crispy treat.
And if you do this with raw chicken skin, you also get a ton of rendered chicken fat at the bottom of the basket.

You know you’re tired when your toddler points to your under eye circles and says, “ouchie?” Cuz they’re so dark they look like a bruise. I’m gonna need to get me those undereye masks.
