There are two kinds of people in this world: People who eat cake on their birthdays and people who don’t. And some of the weirdos in the latter category (I said what I said) eat pie as an alternative. So if you’re a “birthday pie” eater with a late summer celebration coming up, may I present for your consideration: The Atlantic Beach Pie.
NYT Cooking describes Atlantic Beach Pie as a “dreamy mashup” of lemon meringue and key lime. Less sweet than its Florida sister, with a Saltine cracker crust, this North Carolina concoction sounds delightful. Oh, and if, like me, you can never find a good time to make a whole pie, use these tins to make small ones and gift them to neighbors and colleagues. If my brother was eating sweets right now, I would definitely be making this for his birthday this Monday.
Sloane’s birthday is next week. Whatever wrong-headed choices I may make as a mother, serving pie will not be one of them. She will be eating cake. Coconut. Like her middle-namesake, my Great-Grandmother Inez, intended. And while Sloane smashes frosting into her hair, I will be wearing this white dress from Anthropologie.

This North Carolinian adds a quarter cup of tequila and a tablespoon of Cointreau to the pie filling to transform the Atlantic Beach pie into a margarita pie. Cake for baby’s first birthday, margarita pie for mom!
I have noticed a depressing trend of not having cake at children’s birthday parties (if there is a cake is is only a smash cake for the birthday kid). There are cupcakes, ice cream, and other desserts. But who seriously has a children’s birthday party without cake.
