I try to spend 20-minutes every day adding things to my Pinterest boards.  It’s a nice break from my work day.  Typically, I grab a can of Feisty Cherry Diet Coke with a lime wedge and spend a few minutes pinning interiors, recipes, and fashions.  It’s a nice reset before I reassess my to-do list.  But the other day, I fell down a rabbit hole called mini-sheet cakes.

Not since Julia Child has a woman loved cake as much as I do.  And this Mini Chocolate Sheet Cake with raspberry filling from A Cozy Kitchen has haunted my dreams ever since.  (photo is hers)

You see, Kyle does not eat cake.  Chocolate cake is particularly hated, despised only slightly less than brownies.  How I ended up with a husband who not only won’t eat soup, but also doesn’t eat cake, feels like a real fail on my part.

This cake would be perfect for Valentine’s or Galentine’s or because “a party without cake is just a meeting.” I’m going to have to figure out which of my friends isn’t currently doing keto or Whole30 and get a girls’ night together so I have a reason to bake.

      It’s the one thing that makes me still wish that I had coworkers. I miss baking, but I don’t need to eat a whole sheet cake and willpower around sweets is not my skill.

        FWIW – my local homeless aid society is JAZZED when I drop off baked goods. I know my mother used to drop off baked goods at a halfway house with similar success. I also like to make cookies or cakes but don’t want the whole thing around the house…

        (Add a package of tube socks and they’re literally dancing with joy.)

    The hatred of brownies is particularly concerning. I really like that fact that my boyfriend is a garbage disposal because I can make brownies if I want and be free of the duty to eat them all. Godspeed.

    I have NEVER gone back for a second dessert in my life and on more than one occasion, I hid from my kids in the pantry while sneaking seconds and thirds of this cake. So good. SO worth it.
