Of course, I choose the hottest weekend of the year to travel to New York City. 104 degrees with a 75% chance of thunderstorms, fan-tas-tic. But it’s not just the Big Apple that’s baking in the July sun, the entire nation seems to be experiencing a serious heat wave, so I thought this week’s happy hour should include a cocktail that is sure to cool you down.
It’s called a “poptail,” a popsicle made with the alcohol of your choice. Brilliant. This poptail creation includes vodka, pureed strawberries and fresh grapefruit juice. It’s creator at Endless Simmer calls it a Grapefruit and Strawberry Greyhound.
If I weren’t heading to NYC this weekend, I would be breaking out my juicer and popsicle molds.

I usually eat my poptails poolside, but there’s no law that says you can’t serve them for a nicer occasion. I think they would be an excellent choice for a rooftop party.
I own a dress from this brand, and I highly recommend it. The construction of the dress is better than similar brands in the same price point, and the dresses are fun and feminine. Perfect for a summer wedding.
Belle, speaking of NYC and popsicles, you have to try Popbar if you are anywhere near the Village. Just a totally unsolicited recommendation, but they are the most fun delicious pops – you can get them dipped in chocolate and coated in all types of nuts. On Carmine street, I believe.
I made these poptails a couple weeks ago (along with some of the other recipes on the site. They are a bit tricky, since the alcohol makes it harder for them to freeze!
