Happy Hour: Light and Refreshing

When I asked for reader comments a few weeks ago, several of you expressed disdain or at least, ambivalence toward the Happy Hour posts.  The most common reason given: You don’t make cocktails at home.  Well, I’ve got a summer cocktail that is so tasty, refreshing and easy that it might change your mind about drinking at home.

Champagne Cocktail with Mint and Lemon Sorbet from Fresh 365

The ingredients for this cocktail are simple: mint, lemon sorbet, champagne and vodka.  No simple syrup.  No special bitters.  Just four ingredients.  

This cocktail is so refreshing.  It’s perfect for a weekend brunch or a bridal shower.  It would also be lovely with raspberry or lime sorbet instead of lemon.

Kite Dress (Anthropologie, $168)

Because the cocktail is airy and light, I wanted a breezy, flirty dress.  This kite printed dress is just adorable.  It can be worn to the office with a skinny belt and a cardigan.  I can also be worn to a bridal shower, casual summer wedding or Gold Cup.

This strikes me as one of those dresses that you’ll find yourself wearing all the time.  And you’ll probably get compliments on it every time.

    I may not always make the cocktails on your Happy Hour posts, but I look forward to them every week. It reminds me it's almost the weekend! And, it at least makes me want to go somewhere to order a happy hour cocktail…
