One of my goals for 2019 was to eat more vegetables, and I was doing really well.  Enter 2020, a global pandemic, resulting upheaval, and my diet is now mostly tacos and vodka.  This article from The Everygirl got me thinking about ways to add more vegetables to my diet (at least when I get my kitchen back).  It has some good tips and some great recipes.
