The Indian Fried Rice from Alexandra’s Kitchen is one of my favorite recipes that I have ever made.  It’s light, fresh, and still comforting.  I love the interplay between the cilantro, lime, peanuts, and spice.

Given that it is tough to shop right now, I used some simple substitutions.  Instead of curry leaves, I toasted my peanuts with a bit of curry powder and a dash of cayenne.  I didn’t have mustard seeds, so I just skipped them.  And when I couldn’t find a Thai chili, a Serrano worked just fine.

I also added more onion, because both Kyle and I like cooked onion.  And I used quite a bit of lime and cilantro because the recipe advised to “go big with it.”

We had it with leftover grilled chicken.  It would also be wonderful with the Bool Kogi from Trader Joe’s or a grilled shrimp with mango salsa.

    OMG that Hollywood Con Queen Article! I hope they figure out who it is and then share how that person organized all of the specific personal information for each person that was part of the con! Forget bullet journals, the Hollywood Con Queen could create the next great organization system!

    What a fantastic recipe!! I had loads of leftover rice from my rice cooker that I was about to bin…instead I had a fabulous lunch! I baked some chicken to put on top, but it didn’t need it really. Also, I didn’t have curry leaves so I followed advice from The Google and substituted lime zest and fresh basil. Delish! Thx!!
