It’s almost barbecue and potluck season. (Don’t @ me, I’m trying to think of summer, as I am trapped in unending winter.) My biggest crowd-pleasing, easy dish is this Hot Mexican Corn Dip. It’s easy, requires only a few ingredients, and is very tasty. I like Cilantro, so I always add more. And don’t forget to bring a few lime wedges for a burst of bright, fresh flavor.

I love that corn dip. I eat it on EVERYTHING. It’s great with eggs for breakfast, on greens for lunch, etc. etc. 🙂
